The World’s Easiest & Yummiest Key Lime Pie!
You’ve survived another week and life can’t ever be bad when there’s pie at the end of the day. And this is the easiest key lime pie recipe. Whether it’s a weekday or weekend, indulge a bit and make life easier with store bought pie crust or make your own, and use lime juice from a can or a bottle, or use fresh key limes (even better) and put stress and the world on hold as your life gets a bit slower and sweeter. 9 inch graham cracker pie crust or your favorite store bought or homemade pie crust; preferably organic.
Two 14 ounce cans of sweetened condense milk; preferably organic.
6 organic large egg yolks.
1/2 cup fresh lime juice or bottled; preferably organic.
Zest of 1 organic key lime (optional).
Preheat oven to 300 degrees.
In a stand or hand blender, mix milk and egg yolks at low speed until smooth.
Add the key lime juice and zest (if using) and give it a stir.
Pour the whole mixture into the pie crust and bake for 15 minutes.
Let the pie cool for about 20 minutes and then refrigerate for half an hour or so.
Serve chilled and simply enjoy!
