Here’s a healthy, delicious, light, easy, and affordable cake for a weeknight or a lazy weekend. Enjoy a slice with your favorite cup of tea or coffee, kick back, and let the world go by, cuz you’re having cake!



Organic olive oil (for coating the pan)
Organic AP flour (for coating the pan)
11/2 cups organic AP flour
2 teaspoons baking powder
¾ teaspoon kosher or sea salt
1 cup coconut or regular organic sugar, or a combo
1 tablespoon finely grated lemon zest (1-2 lemons)
1/4 cup lemon juice
¾ cup organic whole milk Greek, soy, or coconut yogurt
½ cup organic olive oil
2 large organic eggs
½ teaspoon vanilla extract


 Preheat the oven to 350 degrees.
Coat a loaf pan (8 1/2x 41/4) or a round cake pan with olive oil. Dust with flour and tap out any excess in the sink.
In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt.
In another bowl, whisk together yogurt, olive oil, eggs, vanilla, lemon zest, lemon juice, and sugar.
Add the dry ingredients to the wet and mix gently; just enough to blend. Don’t over mix.
Pour the batter into the pan.
Bake for 50-55 minutes until it is golden brown and the tester comes out clean.
Let it cool. Slice a piece and eat it as is, or sprinkle some powder sugar and/or top with berries, or with a scoop of your favorite ice cream. Enjoy!
