These are incredible, powerful, and delicious tacos that are also healthy, vegetarian, vegan and easy. Amazing combination! You can bake, stir fry, or grill the mushrooms. (gotta try this in the summer) You can also use any combination of mushrooms, but Portobello stands well when grilling.
Take shortcuts by buying store bought salsa, canned chipotle, and/or canned organic pineapples. Make sure to buy organic corn tortillas or regular ones without pesticides, GMO’s, or artificial anything.

6 Portobello mushroom, sliced
1 small red onions; finely chopped
1/4 cup organic extra virgin olive oil
1/3 cup organic orange juice; fresh or store
4 cloves garlic, minced
1 chipotle pepper in adobo sauce, chopped, or 2 teaspoon of chili powder
1 teaspoon smoked or regular paprika
Juice of 2 limes
1/2 cup fresh cilantro, chopped
4-6 Corn tortillas; preferably organic
1 avocados; cubed
Shredded lettuce or red or white cabbage
Hot sauce of your choice (optional)
Vegan cheese (optional)
1/2 of a small pineapple; chopped, or can of organic pineapple
Juice of 1 lime
1/4 fresh cilantro; chopped
1 jalepeno; chopped and seeded (optional)
In a bowl, add the mushrooms, onions, olive oil, orange juice, garlic, chipotle, paprika, lime juice, cilantro, and a pinch of salt. Toss and cover and let it marinate 30 minutes or overnight in the refrigerator.
Make the salsa
In a bowl, combine all the ingredients, stir and set aside.
Make sure you season to your taste.
Stir fry, bake (350 degrees for 7 minutes) or grill the mushrooms. Make sure you flip halfway to cook both sides.
Warm your tortillas on the stove, oven, or on the grill.
Top the tortillas with the mushrooms marinade, avocados, salsa, and shredded lettuce or cabbage, hot sauce, or vegan cheese, if you prefer and devour!
