Makes 21/2 cups

The bright orange color screams Halloween and unbeknownst to anyone, this easy and healthy hummus is nutritiously powerful and delicious.
Sprinkle some cayenne and black sesame seeds on top to look like blood and bugs. So scary….


2 large sweet potatoes or organic canned sweet potato puree
1/4 cup tanihi
3 tablespoons lemon juice
4 garlic cloves
1/12 sea salt
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper or hot sauce (optional)


Preheat oven to 350°F. Scrub 2 large sweet potatoes; pat them dry. Prick the potatoes with a fork. Bake for 1 hour or until very tender.
Let it cool for 15 minutes or so. Halve the potatoes and scoop the pulp into a food processor or blender. Cover and mix until creamy.

Add the tahini, lemon juice, garlic, salt, cumin, and cayenne pepper or hot sauce (optional) and mix for a minute until all is incorporated.
Enjoy with veggies sticks or tortilla or chips, etc!
