Veggie Pasta Carbonara
Serves 4

This is an easy, healthy, light, affordable, and tasty pasta dish without all the fat and calories or messy clean up.


1 box of linguine or pasta of your choice

4 organic eggs (preferably pasteurized)

2 tablespoon Ricotta Cheese

2 teaspoon lemon zest

100 g frozen peas; preferably organic

100 g organic spinach

Salt & pepper to taste

Cook the pasta according to the instruction on the package.

In a medium bowl, mix the eggs, ricotta cheese, lemon zest with a pinch of salt and pepper.

Drain the pasta, reserving some liquid from the pasta water and return it to the pot.

On medium heat, add the egg mixture, spinach, and peas to the pasta. Add some pasta water to loosen up the mixture as needed. Transfer to a serving bowl and serve.

You can serve this dish with a green salad with a simple vinaigrette and/or a glass of white wine of your choice.
